CURRENT RELEASE
  • A long and cool spring with good rainfall and mild summer conditions meant that the fruit for this wine was picked a few weeks later than normal. An early morning harvest had the fruit delivered to the winery in pristine the condition. After pressing, the Riesling juice was fermented cool in stainless steel for 21 days to retain freshness and aromatic intensity in the finished wine. Download Full Tasting Note  
  • Hand picked and gently destemmed, the varieties grow together in the vineyard and ferment together in open fermenters for 7 days while being pumped over twice daily by hand. They then mature together for 24 months in 20% new French and 80% seasoned puncheons. Our best estimate is 85% Grenache, 15% Mataro.
    Tasting Notes
    Layered notes of cherry, raspberry compote, dark chocolate, and dried spice. The Grenache sings through on the palate with red and dark berry fruits backed by the earthy savory finish that only Mataro can provide. A medium bodied Grenache wine with plenty of fine structural tannins that finishes long. The wine has sufficient structure to reward patient cellaring for at least a decade. After a cool fermentation in stainless steel for 14 days the wine was chilled in order to stop the ferment, hence leaving around 30g/L residual sugar.   • After hand picking, the grapes were destemmed prior to fermentation into open top fermenters and gently pumped over by hand, twice a day, for 10 days. The resulting wine was matured for 24 months in new (30%) and seasoned French oak hogsheads prior to careful racking and blending. A further two years in bottle has allowed the wine to develop further complexity.

  • ** 6 bottle limit per customer ** The pedigree and provenance of the shiraz vineyard at Hutton Vale Farm is impressive. The ‘old’ block was planted in the 1960s with cuttings taken from the nearby Mt Edelstone vineyard. 55 years down the track, the old dry grown vines continue to survive with a little more nurturing in their middle age, using mulching and mid row management. Eight acres planted to the East in the 1990s from cuttings taken from the ‘old’ block are the “grandchildren” of the original plantings at Mt Edelstone. Hand picked and destemmed to open fermenters where it was inoculated with selected yeast strains and fermented warm (peaking at around 24C) over 5 to 7 days.  During this time the ferment was hand pumped over (by actual humans) twice a day for 45 minutes each time.  It was then drained and pressed to tank to ferment to dryness. Malolactic fermentation was completed in thick staved French Oak puncheons (40% new) with maturation for 30 months
    Tasting Notes
    Deep red with purple tinges, pepper and aniseed with herbal undertones lead into cherry and plum fruit with traces of violets and forest floor. On the palate, rich, red berries and brambles entwine with white pepper and spice complemented by cedar oak and mouth-coating tannins leading to a lingering spiced plum aftertaste.

  • This wine has 21 years of age and has been carefully cellared. It is not a syrupy disappointment but a well-structured wine that has amazed us in its longevity, so much so, we sought an independent opinion. His response was “No need for a complaints department on this, this wine is amazing and a testament to how good the fruit is. It still has years ahead of it.” ………………Thanks Mark!  2002 was the year of unreliable corks imported into Australia. These 6 packs are going out for the price of 4 in case a cork lets us down, all six may be perfect, we just don’t know, until you open it.     
  • The delicious 2011 back vintage Riesling shows the joy of cellaring. A rich and developed flavour that goes so well with yabbies, crayfish, and prawns. If you are a fan of old Rieslings, this will not disappoint. 3 bottle limit.
