After hand picking, the grapes were destemmed prior to fermentation into open top fermenters and gently pumped over by hand, twice a day, for 10 days. The resulting wine was matured for 24 months in new (30%) and seasoned French oak hogsheads prior to careful racking and blending. Tasting Notes
Brooding dark red fruit, plum, black pepper, anise, and cedar spice drive a complex array of aromatics. The aromas carry on to a palate that is rich and generous, with fine elegant tannins that accentuate the wine’s length. After pressing, the wines were allowed to mature in a mix of new (11%) and seasoned French oak barriques prior to blending. Perfumed and varietal with classic Cabernet aromas of cassis, dark-berried fruit and plum. Time in glass has afforded the wine further complexity with overtones of clove, anise and tobacco leaf that creates an intriguing array of aromas that carry well onto the palate. Hand picked and gently destemmed, the varieties grow together in the vineyard and ferment together in open fermenters for 7 days while being pumped over twice daily by hand. They then mature together for 24 months in 20% new French and 80% seasoned puncheons. Our best estimate is 85% Grenache, 15% Mataro.
Tasting Notes
Layered notes of cherry, raspberry compote, dark chocolate, and dried spice. The Grenache sings through on the palate with red and dark berry fruits backed by the earthy savory finish that only Mataro can provide. A medium bodied Grenache wine with plenty of fine structural tannins that finishes long. The wine has sufficient structure to reward patient cellaring for at least a decade. A long and cool spring with good rainfall and mild summer conditions meant that the fruit for this wine was picked a few weeks later than normal. After a cool fermentation in stainless steel for 14 days the wine was chilled in order to stop the ferment, hence leaving around 30g/L residual sugar. This sweetness brings richness to the palate but paired with the lovely natural acidity the wine is balanced and shows amazing floral and citrus characters. Download Full Tasting Note

A long and cool spring with good rainfall and mild summer conditions meant that the fruit for this wine was picked a few weeks later than normal. An early morning harvest had the fruit delivered to the winery in pristine the condition. After pressing, the Riesling juice was fermented cool in stainless steel for 21 days to retain freshness and aromatic intensity in the finished wine. Download Full Tasting Note

A balmy vintage in 2022 led to perfect growing conditions for Eden Valley Riesling with high quality fruit. Fermented slightly cooler than its drier cousin, the longer ferment allowed for maximum expression of character. The ferment was stopped with 45g of residual sugar when the wine was at its floral best with citrus driven acidity bringing balance to the richness of the palate. The vintage conditions lent themselves well to high quality, expressive white wines in 2022 and this is no exception.
Tasting Notes
Lemon sherbet, citrus blossom and candied ginger immediately jump out of the glass. The generosity of the palate is highlighted by white fleshed stone fruit and honied florals, finishing crisply with juicy acidity – the perfect foil to any lingering sweetness. A balmy vintage in 2022 led to perfect growing conditions for Eden Valley Riesling with high quality fruit resulting in a classic Hutton Vale wine. Fermented cool over a 14-day period in stainless steel, the resulting wine jumps out of the glass with vitality.
Tasting Notes
Zesty and driven, the fresh citrus fruit is lifted by perfumed delicate florals and struck flint. A zip of acidity on the palate balances well the generosity of fruit, with a long and textured finish.
